Bon appétit!
About the Chefs: Originally from Brittany, a scenic peninsula region in northwest France, Frédéric Henry has deep roots in traditional French cooking. After managing several restaurants in New York City early in his career, Fred met Paula, and they returned to France together for five years.
Returning together to NWA in 2005 to raise their family amongst family, they made a bold and heartfelt decision to share Fred’s French culinary heritage with the area by jumping into the new idea that was gaining momentum in other US cities, a food truck. Fred’s home region of Brittany was their inspiration – it's known for its Celtic heritage, and the capital city of Rennes is famous for specialties like savory buckwheat galettes, crêpes, and hard cider.
Their decision was timely, and their “Crêpeshow” gave customers a view into how their meal was made by stepping up and watching through the huge windows – the result was great food, special but not fancy, unique but familiar.
Their business has grown into the two restaurant locations of Crepes Paulette, in Fayetteville and Bentonville. Each step of their journey was an evolution while also keeping the same core belief that the food they create should fit into your life – handheld doesn’t mean simple but can mean deliciously portable and efficient, while delivering full bites of flavor crafted with intention.
About the Kitchen Table and Small Plate Dinner Series - Born out of a desire to build a community around great food, Apple Seeds' Kitchen Table Dinner and Small Plate series is designed to recreate the feeling of gathering around a dear friend's table. These dinners aim to bridge the gap often felt between the chef and diners in a typical dining environment, thereby creating a deeper connection to the food on the plate. Through intentional procurement of local, seasonal ingredients, the transparent preparation of the meal, and storytelling by the chef, each plate is transformed from food into an unforgettable dining experience.
